Nuts and seeds are a big part of my diet, for many reasons. They are an excellent plant-based source of high quality fat and protein, they are high in fiber, and they taste good! Since they are the eggs of the plant world, I also like that I’m eating something that has the power to sprout new life.

To get the most out of these little powerhouses, I like to grind them freshly myself. Once whole foods are cut or ground, they immediately start losing vital essence or Qi. By grinding them myself, I make sure that I’m getting the peak of nutrition (and flavor) from them. If they are pre-ground, who knows how long they have been sitting on the shelf at the supermarket. Grinding them freshly also ensures that those nutrients have a better chance of being absorbed by my body, and not just pass through, still in their whole, albeit tiny form.

This may sound like a lot of trouble, grinding your own seeds. I assure you it’s really not. I have a coffee grinder that I use specifically for seeds and spices. These days you can get one online for less than $15. (See image and link below) I put freshly around flax or chia seeds on my breakfast in the morning and it takes all of 10 extra seconds to grind them and pour them on top of my porridge. Ten seconds to completely up-level the nutrition of a meal. Totally worth it for me.
